Does the background color also have to be the black text color? I might want to change the background to orange or something but still keep black text black.

You can do this by switching on the "Use Custom Colour 16 as default" option in ANSI Colour. I use this to make black a.. very dark grey, but it could be also used to change the background whilst keeping black as it is.

Personally, I over-ride the ANSI colours to force my own. I force black to actually present off-white. I have modified the other colours mildly so that that they present better on my off-white background. (For example, I 'dirty' the yellow a bit so it looks better.

I use the global configuration in MUSHclient to set these as my default colours, so any world I open will use them.

To really answer your question, I don't think you can force a background colour without playing with the ANSI table. In other words, if you over-ride the colour of the background, any foreground text will also be presented with the same over-ride.
